Vegan Banana Nut & Choc Chip Muffins
Healthy, moist, and delicious banana muffins with an added crunch!

Ingredients
  • 1 3/4 cups all purpose flour to make it healthier I add half spelt flour + half all purpose
  • 1/3 cup coconut sugar
  • 2 teaspoons baking powder
  • 2 teaspoons cinammon
  • 1 teaspoon tea masala mix optional
  • 1/2 teaspoon baking soda
  • a pinch salt
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 3 large overripe bananas
  • 1 tablespoon agave syrup (skip if you use regular sugar)
  • 1/4 cup plant based milk (use only after mixing + add more if using whole grain flour))

  • 1 tablespoon agave syrup (skip if you use regular sugar)
  • 1/4 cup plant based milk (use only after mixing + add more if using whole grain flour))
Instructions
  1. Preheat oven to 375 degrees F and prepare your baking sheet with cupcake liners/grease pan
  2. In a medium-sized bowl, add the flour, coconut sugar, baking soda, baking powder, and salt, and mix till the ingredients are combined
  3. In a separate bowl, mash the bananas & add melted coconut oil, vanilla extract, and 1 tablespoon of agave.
  4. Add the mashed banana mix into the flour bowl and stir till mixed in. (If the mixture is too thick, add some more milk) The dough should be thick and moist, but not watery.
  5. Add in a handful (or more) of chocolate chips and walnuts to your liking
  6. Bake for about 20 min. Ovens vary, but after 20 minutes do the toothpick test - if it comes out clean it should be ready.
  7. Remove from oven and let cool for 10 min before munching!
