Honey BBQ Chicken Drumsticks & Hasselback Potatoes

Ingredients
  • 1 tablespoon Seasoning Salt
  • 2 tablespoons black pepper
  • 2 tablespoons Smoked Paprika
  • 1/2 cup BBQ Sauce
  • 1/4 cup Honey (varies on how sweet you want it)
  • 3 cloves garlic
  • 2 tablespoons water (add more if BBQ mixture is too thick)
  • 8 Chicken Drumsticks
Garlic Butter Hasselback Potatoes
  • 8 potatoes
  • 2 cloves garlic
  • 2 tablespoons Butter
  • 2 tablespoons olive oil

Garlic Butter Hasselback Potatoes
  • 8 potatoes
  • 2 cloves garlic
  • 2 tablespoons Butter
  • 2 tablespoons olive oil
Instructions
  1. Preheat Oven to 400 Degrees
  2. Mix all the spices in a bowl and rub onto the chicken, making sure you go over and under the skin
  3. Place seasoned drumsticks in a greased baking dish
  4. Make the BBQ mixture by mixing BBQ Sauce, honey and crushed garlic in a bowl. Add water if the mixture is too thick.
  5. Coat the chicken with the bbq mixture (leaving some of the mixture to baste on the chicken later) and place in oven or move on to making the rest of the potatoes
Hasselback Potatoes
  1. Take a wooden spoon and place a potato on top. Cut potato crosswise into thin slices, stopping when your knife hits the wooden spoon. Repeat with remaining potatoes.
  2. Create the garlic butter mixture by melting butter in a microwaveable bowl.
  3. Add garlic, salt, and olive oil to the melted butter. Mix and spread the mixture between the potatoes, leaving a little bit of the mixture to add on to the potatoes later.
  4. Place potatoes and chicken in oven at the same time for 45 minutes. Check on at 20 minute intervals and baste both of the mixtures on top.
  5. After 45 minutes to an hour, the meal should be ready. Sprinkle parmesan, parsely or any topping on top of the potatoes and serve!
