Sharing a pretty popular recipe – Kenyan Crispy Potato Bhajias but #Healthified! No deep fry is needed for this one, and I share some options on how to use the oven or air fryer.

Crispy Bhajia Recipe
Bhajia's are a popular Kenyan street food recipe that is guaranteed to have you addicted. Traditional bhajias are deep-fried, but this healthier version will have you feeling guilt-free (best excuse to eat more!)

Ingredients
  • 4 Medium Russet Potatoes
  • 1 and 1/2 cups chickpea/flour
  • 3-4 garlic cloves (more if you want it to be garlick-y!)
  • 1 tablespoon fresh ginger
  • 1/2 cup chopped cilantro
  • 1 teaspoon coriander (garam masala - if you want it more flavorful)
  • 1 teaspoon chili powder
  • Salt & Pepper
  • 1 Cup water add slowly till desired thickness
  • Grapeseed oil (or other healthy oil of choice)

Instructions
  1. Thinly slice potatoes and sprinkle salt on them to get the starch out and enhance the flavor. Leave for 15 minutes or longer to get abos
  2. Add all the dry ingredients into a bowl and add in the water until it reaches the desired thickness. (The thicker it is, the thicker the coating!)
  3. Drop your potatoes into the batter and ensure that they're coated on all sides
  4. Add grapeseed oil to the pan and wait till hot then add the potatoes, making sure to separate they're not overcrowded in the pan.
Recipe Notes

Oven-baked Recipe:

Make sure you add oil to the batter to prevent the potatoes from sticking together -Pre-heat oven to 400 degrees farenheight/200 degrees celsius. -Place soaked potatoes on parchment paper -Spray oil on top and place in oven for 15-20 minutes!

Air Fryer

*same recipe as oven-baked, but put in the air fryer for 7-8 minutes!
